Pan Fried Fish
You can pan-fry any white-flesh fish: catfish, trout, bream, crappie, tilapia, etc. I use a mixture of seasoned flour and corn flour. You can use seasoned corn meal with very good results.

To pan-fry fillets, use a big skillet. 2 tbs butter and enough olive oil to coat the bottom of the pan. Coat wet fillets (water is all you need) in fry mix and fry in butter/oil mixture until golden on both sides.

I cook this several ways - just add toppings.

Queso cheese and pico de gallo were excellent with this!!
