Parmesan Potatoes
This is Paul Salvant's recipe - make a lot, it goes fast!

5 lbs red potatoes, sliced thinly on a mandolin
3 sticks butter, melted
1 packet Italian dressing mix
1/2 cup grated parmesan cheese, plus some for sprinkling on top
Magic Swamp Dust Cajun seasoning to taste (about 1 tbs)

Preheat oven to 350. Spray 2 large muffin tins with nonstick spray.

In a large bowl, mix the butter, Italian dressing mix, and parmesan cheese. Add the sliced potatoes and toss to coat. Sprinkle well with Magic Swamp Dust. Add the seasoned potatoes in a vertical stack (like a deck of cards) in the muffin tin cups. Drizzle with any remaining sauce from the bowl and sprinkle with a little extra parmesan cheese. Bake at 350 for 35 - 40 minutes, until potatoes are tender.
