Salvant Corn Macque Choux
This is Paul Salvant's recipe.

1/2 lb bacon, cut in pieces
1/2 lb smoked sausage, sliced
1 cup chopped bell pepper (color peppers are best)
1 can Rotel tomatoes
1 small can tomato sauce
Magic Swamp Dust cajun seasoning
3 cans sweet kernel corn (or 2 small frozen bags)


In a dutch oven, cook the bacon and sausage over medium heat for 5 minutes. Add the bell peppers and onions, cook for another 10 minutes, stirring every now and then. Add the Rotel tomatoes and tomato sauce, stirring well. Add the corn, season with the Magic Swamp Dust, stir well. Cover and cook on medium low, stirring occasionally until the corn is tender and the liquid has reduced all the way down.
