Salvant Smothered Potatoes
1/2 lb bacon, cut in pieces
1/2 lb smoked sausage, sliced
1 cup chopped bell pepper (colored ones, if you have them)
1 cup diced onions
Magic Swamp Dust cajun seasoning
2-3 lbs red potatoes
1/4 cup olive oil
1 cup grated colby jack cheese
In a dutch oven, fry bacon pieces and sausage over medium heat for 5 minutes. Add bell pepper and onions, cook for 10 minutes. Add potatoes, seasoning, and olive oil. Stir to incorporate everything, turn heat down to medium low, and cover the pot. Let cook for 20 - 30 minutes, until the potatoes are tender. Stir everything together, then top with cheese. When the cheese is melted, it's time to serve.
