Potato Salad & Gator Pickles
2 lbs small potatoes, peeled, quartered
2 eggs
1/4 tsp salt

1 cup mayo or Miracle Whip
1 tablespoon Creole mustard
1 tbs yellow mustard
1/2 cup Gator Pickles Relish or chopped Gator Pickles
Magic Swamp Dust to taste

In a large saucepan, add cut potatoes and eggs. Cover with cold water by an inch and add 1/4 tsp salt. Bring to a boil. When potatoes are tender, drain and let cool. Peel the eggs and finely chop. Add potatoes, eggs, and all of the remaining ingredients. Fold to combine. Give it a taste and serve with your favorite gumbo!
