Purple Hull Pea Salad
Similar to Cowboy Caviar with Black Eyed Peas, this salad makes great use of Purple Hull Peas. We grow these in our backyard, so I was looking for something to do with them (other than smothering them down with ham hocks). 1 cup Purple Hull Peas
1/2 cup Gator Pickles Zucchini Chow Chow
1/2 to 1 cup each chopped tomato, red/yellow/orange bell pepper, red onion
1/2 cup grated parmesan cheese
1/2 cup Italian dressing
Magic Swamp Dust seasoning to taste (salt/pepper/garlic/lemon flavor)

If using fresh Purple Hull Peas from the garden, they'll probably be a little firm. Steam them in the microwave with a little water for 1 -2 minutes to desired tenderness. If using peas from the freezer section, just let thaw. Canned peas, drain.

Mix all ingredients together in a large bowl and refrigerate until ready to serve. Very good with parmesan crisps or tortilla chips.
