Quail w Carolina BBQ sauce
6 quail, dressed and plucked or skinned
2 cups orange juice
1/4 cup Magic Swamp Dust cajun seasoning

Carolina BBQ sauce:
2 tbs butter
1/2 cup yellow mustard
1/2 cup apple cider vinegar (I used 1/4 c vinegar, 1/4 c Gator Pickle juice)
1 tbs worcestershire sauce
2 tbs light brown sugar
hot sauce
(Simmer all ingredients over low heat in a small pot for about 20 minutes, whisking occasionally)


Marinate quail, letting the dressed birds soak in the orange juice and Magic Swamp Dust in a ziptop bag overnight. Remove the meat from the marinade and grill over medium high heat, basting with Carolina bbq sauce right at the end of cooking.
