Satsuma Sugar Cookies
I came up with these for a quick, easy recipe for Sue McDonald's cookie swap. For 6 dozen, I used 2 packs of Betty Crocker Sugar Cookie Mix.

This makes 3 dozen 2-inch cookies:

1 package Betty Crocker Sugar Cookie Mix (plus ingredients per instructions)
1 large satsuma
1 cup powdered sugar

Use a microplane grater (or lemon zester) to gently zest the satsumas. Put the zest in the bowl that you're using to mix the cookie batter. Mix the batter and bake the cookies according to the "drop" cookie instructions.

Cool completely.

Make a glaze with 1 cup powdered sugar and the juice of the zested satsuma. Mix well.
