Shannon's Pecan Pie
Thanks to Shannon LeMoine, this is her recipe.
3/4 cup firmly packed light brown sugar
2 tbs butter, softened
3 well beaten eggs
1 cup light Karo syrup
2 tsp vanilla extract
1/4 tsp salt
1 1/4 cup pecan pieces
1 deep dish pie shell
(note: we used a frozen pre-made pie shell. a refrigerated pie crust in a dish is fine, too)
Preheat oven to 450.
In a bowl, mix butter and brown sugar. Add eggs, syrup, vanilla and salt. Mix well. Add pecans and stir. Pour into pie shell.
Bake at 450 for 12-14 minutes. Lower heat to 340 and continue to bake for 40 minutes.
Remove from oven and let cool before serving.
