Shrimp wrap w/avocado
I was making this at the same time that I was making chicken salad and I cooked the shrimp in chicken stock. You can use precooked shrimp or just quickly cook the shrimp in some salted water.
1 1/2 lbs peeled and cleaned small to medium shrimp
1 lemon, divided in half
fresh thyme leaves
1 avocado, pitted and mashed
1/2 cup lowfat mayo
lettuce, tomato, other toppings
If the shrimp are not already cooked, cook them just until pink (poaching, grilling, panfrying, whatever). In a bowl, add the cooked shrimp and squeeze 1/2 a lemon over it. Add seasoning and thyme leaves to taste.
In another bowl, add the avocado, 1/2 lemon juice and cajun seasoning to taste. Blend with mayo.
Warm the tortilla wraps according to package directions. Layer with avocado mayo, shrimp and whatever toppings you desire.
