Smothered alligator legs
2 lbs alligator legs
2 tbs oil
2 lbs chopped creole veggies (onion, bell pepper, celery, garlic)
Dredge the alligator legs in the seasoned flour, shaking off excess. Heat the oil in a cast iron dutch oven over medium heat. Brown the legs on both sides. Remove the legs from the pot and set aside. Add onion blend to the pot, stirring well to get all the brown bits off the bottom of the pot. Cook until the onions are wilted. Add the alligator back into the pot, season well with cajun seasoning. Stir in about 1/2 cup water. Lower the heat to a simmer, cover the pot and let cook until the gator is tender and falling apart (about 20 minutes or so). Check for seasoning. Serve over rice.
