Smothered potatoes
This is a favorite at Val's Marina in Maurepas.

1/4 cup oil
2 lbs smoked sausage, sliced
2 lbs onions, diced
5 lbs cubed potatoes
salt, pepper, red pepper
1 cup sliced green onions
2-3 cups water


In a very large cast iron dutch oven, heat oil and saute sausage on medium heat. Add onions and cook until browned, scraping up brown bits off the bottom of the pot. Add potatoes and green onions, season to taste, stir to incoporate seasoning. Add water, lower heat to low, cover tightly and let potatoes smother until tender. The more water you add, the softer the potatoes will be.
