spinach and artichoke
This can be made ahead and refrigerated for a few days. All it needs is to be mixed and heated through. You can use a microwave or almost any heat source to warm it up. Serve with tortilla chips or crackers.

1 jar marinated artichoke hearts
1 10 oz pkg frozen spinach, thawed and drained
1/2 cup shredded parmesan (or parm blend)
3/4 cup shredded mozzarella (or italian blend cheese)
1 cup reduced fat mayonnaise
seasoning options: paprika, garlic powder, cajun seasoning

Preheat oven to 350. Drain and chop the artichoke hearts. Stir together with all ingredients. Spread in an even layer in a pie plate or oven proof dish, sprinkle the top with a little seasoning and heat in the oven for 20 minutes or until heated through.
