Squash Casserole
Creamy, cheesy goodness! This is Paul Salvant (The Bug Man)'s recipe.
1 tbs olive oil
6 - 8 yellow squash, sliced
1 onion, sliced
2 tsp Magic Swamp Dust Cajun Seasoning
8 oz sour cream
Topping:
1 sleeve Ritz crackers, crushed
2 cups shredded cheese
1/4 cup grated parmesan cheese
Preheat oven to 350.
In a large skillet, add olive oil, squash, and onion. Cook over medium heat until squash are tender, seasoning with Magic Swamp Dust. Stir in the sour cream, until creamy and incorporated. Pour squash mixture into a large baking dish. Top with combined topping ingredients. Bake at 350 for 30 minutes, until golden brown.
