Sweet & Sour alligator legs
The front legs of the alligator are much like frog legs or chicken wings, just a darker meat. Frying them is just as easy! Recipe courtesy Val's Marina.
12 oz light beer
1 1/2 cups flour
1/2 tsp salt
1 cup seasoned flour for dredging
Pour the beer into a large bowl. Sift the flour and salt into the beer, whisking until the batter is light and frothy. One at a time, dredge the alligator legs in the seasoned flour, then dip into beer batter, then put into a fryer set at 350. Fry 5-6 minutes, until golden brown. Drain on paper towels and serve with sweet & sour sauce.
Sweet & sour sauce:
2 cups cold water
2/3 cup white vinegar
1 cup white sugar
1/2 cup brown sugar
1/2 cup ketchup
1 (8 ounce) can pineapple tidbits
3 tablespoons cornstarch
In a medium saucepan over medium heat, whisk together water, vinegar, sugars, ketchup, pineapple tidbits and cornstarch. Cook, stirring occasionally, 15 minutes, or until mixture reaches desired color and consistency. Serve over alligator legs.
