Sweet N Spicy Alligator
We always soak our venison in orange juice to kill any gamey taste. Turns out, this works very well with alligator too! We cooked these on a cast iron flat griddle on a gas grill, but a cast iron grill pan would work too.

1 lb alligator meat, cut in bites
enough orange juice to cover meat in a container (Ziploc bag works great)

Marinade:
1/4 cup worcestershire sauce
2 tbsp olive oil
Magic Swamp Dust cajun seasoning
1/4 cup sugar (or less, to taste)
Several squirts of Sriracha hot sauce (the one with the rooster on it - it's super hot, so be careful)

Let alligator soak in orange juice for at least 2 hours. Drain the juice, then toss the alligator in the marinade. Let it soak for 2 hours or longer. Drain. Using a griddle or a grill pan, cook the alligator over medium-high heat. Let the pieces cook long enough on each side to make a crust (don't keep tossing and turning them) and don't overcrowd the pan. These small pieces cook quickly - so just a few minutes each side.
