Sweet potato chips
3 sweet potatoes, peeled
Peanut oil for frying
cajun seasoning or salt to taste

Thinly slice sweet potatoes with a salad shooter or mandolin slicer or food processor. Cutting them by hand is not recommended.

Heat peanut oil to 350.  Rinse sweet potato slices in water and pat dry, making sure none of the chips are stuck together.  Fry until floating and crispy. Remove to paper towels to drain. Season well.
