Trout and cilantro tartar sauce
Lightly brush each side of fish with canola oil. Salt and pepper (or cajun season) to taste. Grill over medium heat until fish is flaky.

Horseradish/Cilantro tartar sauce
1/3 cup mayo (low-fat ok)
1 tsp lemon zest
2 tbs horseradish (or less, as desired)
1 tbs chopped onion
3 dashes hot sauce
2 tbs chopped cilantro
salt, pepper to taste

Combine all ingredients and let chill for at least 30 minutes and up to 1 day.
