I know what you're thinking - strawberries and fish?? I thought so too, until I tried this. Dang! That's some good flavor! I wouldn't use this on really "fishy" fish - make sure it's cleaned well. I used speckled trout because of its very clean taste, but this would be good on lots of white fleshed fish.
2 fish fillets
Magic Swamp Dust cajun seasoning
butter or olive oil
Drizzle:
6 large strawberries
1/4 cup balsamic vinegar
1/4 cup sugar
1 jalapeno, seeded
Blend all these in a food processor until smooth.
Preheat a griddle or grill pan over medium high heat. Don't get crazy with the heat - you don't want it smoke when the butter (or oil) hits it. I seasoned the fillets on both sides, then dredged it through some melted butter, then laid it down on the hot griddle, presentation side down. Let it cook on that side for a few minutes, then carefully flip it over and let it finish cooking on the other side. I use a little of the brown butter in the pan to baste with. When it's cooked through and flaky, it's ready. Drizzle a little strawberry-jalapeno sauce on top and serve hot.
