Watermelon soup
Serve this in a glass and it's a slush. Serve it frozen and it's a granita!
1 small seedless watermelon
1 jar of mango slices (or 2 mangoes, peeled and sliced)
1 small bag of frozen peaches
1 tbs ground ginger
flavored rum or vodka, optional
1 lime
Cut the watermelon in half. If you want to use the watermelon halves as serving dishes, scoop out all the flesh with a melon baller or ice cream scoop and put in another bowl. If you're using individual dishes or a large punch bowl, you can cut the watermelon into quarters to get all the melon out.
Dice half the watermelon flesh and the mango slices. Add them to a bowl and sprinkle with the ginger. Toss gently to incorporate. Let sit to the side while you prepare other ingredients.
Add the other half of the watermelon flesh to a blender and add frozen peach slices. Blend until smooth. If you want to spike this, you can add a flavored rum or vodka to the blender while blending.
Place gingered fruit pieces into the bottom of the serving dish. Top with blended watermelon soup. Garnish with slices of lime.
